The National Park College (NPC) Hospitality and Tourism Management program served
meals at the Jackson House last month. The program has participated in annual cereal
and food drives, and helped with NPC’s Food Pantry in an effort to address food insecurity
on campus, and plans to continue supporting the Jackson House in the future.
One of the core issues emphasized in the program’s curriculum is food waste. Recognizing
its impact on both the financial viability of food and beverage establishments and
the well-being of the community, NPC Hospitality and Tourism Management is taking
proactive steps to minimize waste.
To kick off this effort, NPC Hospitality collaborated with the team at TK’s Tacos.
They creatively repurposed nearly expired items from the campus food pantry, transforming
them into casseroles and cornbread. These meals were prepared and served during last
month’s event.
Katherine McCorkle, Student Accounts Manager at NPC, contributed mini cinnamon rolls
for dessert. Students also participated in prepping and serving and are anticipating
the next opportunity to contribute. The program has marked future dates throughout
the school year on its calendar.
“The hospitality industry fosters hearts of service,” said Eve Victory, Associate
Professor of Hospitality and Tourism Management. “In a world dominated by technology,
face-to-face interactions provide not only a platform for developing communication
and teamwork skills, but also an opportunity to cultivate human kindness.”
