HOSPITALITY WINS PEOPLE’S CHOICE AT CHOCOLATE FESTIVAL

Hot Springs, Arkansas – National Park College (NPC) Hospitality and Tourism students won the People’s Choice award at the Cooperative Christian Ministries and Clinic (CCMC) Chocolate Festival Sunday.

Students prepared more than 800 servings of Chocolate Raspberry Cheesecake Trifle for the event as part of the Restaurant and Event management course. After deciding on a theme of “Elegance in Chocolate,” the students began to consider décor and dessert choices.

Hospitality StudentsLed by student Tiffany Epperson, multiple recipe-testing efforts resulted in the creation of their entry, Chocolate Raspberry Cheesecake Trifle. Trifle is a traditional English dessert that combines cake, custard or cream, and fruit. Students made the perfect portion of chocolate wafer crumbs, cheesecake custard and raspberry mousse in shot glasses topped with dark chocolate drizzle and a fresh raspberry. Their tablescape reflected the colors of the dessert, using pink satin on black with silver trays and silver tasting spoons in glasses on mirror to complete the look. All students wore black with pink satin bowties or scarves.

Instructor Eve Victory was pleased by all of the guest feedback. “Over and over I was told how beautiful our setup was and that our dessert was wonderful, but above all how professional, cordial and welcoming my students were,” Victory stated.
